Simple Stuffed Peppers & Prawns

  • Olive Oil

  • Lemon Juice

  • Chicken or Vegetable Stock Cube

  • Salt & Pepper

  • Mixed Herbs

  • Chilli Flakes

  • Sweet Chilli Sauce

  • Garlic Powder

  • Feta Cheese

  • Red Peppers

  • Watercress

  • Couscous

  • Large Tiger Prawns (I opted for prawns with the shells on but you can use peeled if you prefer, there's less mess)




Measure out the couscous (see the instructions on pack for serving amounts/cooking time)


Boil water and add stock cube of your choice and stir until it's melted, then add the couscous, cover and leave to simmer.


Cut peppers in half and scoop out the insides, fill with the cooked coucous and crumble feta cheese on the top.  Add salt, pepper, herbs and chilli flakes, put in the oven at 180 degrees for about 10 mins, I just keep an eye to see when they're cooked, like I said i'm not a professional :)


Mix prawns with oil, garlic powder, sweet chilli sauce, chilli flakes, lemon juice, salt and pepper, and fry until cooked.


Serve with watercress and enjoy :)
