How to Make Protein Pancakes

These were my pancakes from Pancake Day :) Just because I'm eating healthier doesn't mean I miss out on yummy food!

 

Ingredients:

 

  • 2 Eggs

  • Almond Milk

  • Coconut or Olive oil spray

  • Vanilla Protein Powder (I used Juice Plus but will work with any)

  • Any toppings you want to add, I added strawberries and honey

 

Method:

 

Crack the eggs into a bowl add one scoop of protein powder (I used vanilla) add a splash of almond milk and whisk until all lumps are gone.  I like to think of this as a mini arm workout! :)

 

Spray oil into your pan and wipe round with a bit of kitchen roll (this helps the mixture not stick)

 

Cook, Flip and enjoy!
