Healthy Pasta

Healthy Pasta 

 

Ingredients:

 

Wholegrain Spelt Penne

Tinned Chopped Tomatoes

Sun Dried Tomatoes

Onion

Mixed Olives

Red Chilli

Chorizo

Yellow Pepper

Mushrooms

Olive Oil

Flat Leaf Parsley 

Chilli Flakes

Italian Mixed Herbs

Salt & Pepper

 

Method:

 

Boil water and add salt, and pasta.

 

Chop up all ingredients, add a splash of oil into the frying pan.  Add onions and pepper, cook until onions are soft then throw in the chilli, mushrooms, chorizo, sun dried tomatoes, olives, salt, pepper, chilli flakes and Italian mixed herbs.

 

Fry for around 5 mins then add the tinned chopped tomatoes, taste and add more seasoning if needed.

 

Drain pasta and mix into the sauce in the frying pan (not sure why but it's meant to taste better this way round instead of putting the sauce on top of the pasta).

 

Add the flat leaf parsley to garnish and enjoy :)
