Colourful Crab Salad

Colourful Crab Salad

This is a really refreshing, light, healthy meal and has 4 of your 5 (apparently now 10) a day. 

 

Ingredients:

 

  • Crab Meat

  • Crayfish Tails

  • Lemon

  • Mango

  • Vine Tomatoes

  • Avocado

  • Cucumber

  • Chives

  • Salt & Pepper

  • Smoked Paprika

 

Method:

 

Dice the avocado, cucumber, mango and vine tomatoes (remove the tomato seeds)

 

With a fork, break up the crab meat in a bowl and add the lemon juice and smoked paprika.

 

Mix up the avocado, cucumber, tomato and mango and put on a plate, next add the crab meat.  

 

Sprinkle the crayfish tails on top add salt, pepper, a squeeze of lemon and add chives to garnish.
