 Healthy Breakfast

 

Ingredients:

 

Bacon Medallions

Portobello Mushroom

Vine Cherry Tomatoes

Rice Cake (I get Sainsbury's Be Good To Yourself as they are 29 calories each)

Egg

Chilli Flakes

Salt & Pepper

Flat Leaf Parsley

Olive Oil Spray

 

Method:

 

Place the mushroom and vine tomatoes onto a bakin tray and sprinkle salt and pepper on, put in at about 120 degrees for about 10 mins.

 

While the mushroom and tomatoes are in the oven, spray the olive oil into 2 pans, crack the egg into one and the bacon into the other.  Sprinkle chilli flakes, salt and pepper onto the egg.

 

Serve the egg on the rice cake and garnish with the parsley.  Add the bacon, tomatoes and mushroom to your plate and enjoy!
