Seafood with Lime & Chilli Couscous

 

Ingredients:

 

  • Olive Oil

  • Chicken Stock Cube

  • Celery Salt

  • Mixed Italian Herbs

  • Lime

  • Onion

  • Red Pepper

  • Yellow Pepper

  • Cherry Vine Tomatoes

  • Chorizo

  • Chilli

  • Prawns

  • Scallops

  • Squid

  • Cucumber 

  • Lettuce

 

Method:

 

Chop the peppers, tomatoes, onions, chorizo and chilli and simmer in olive oil in a pan.  Add celery salt, mixed herbs and a squeeze of lime.

 

Add the prawns, scallops, squid and simmer until tender.

 

Chop the lettuce and cucumber and put on the plate.

 

Mix the chicken stock cube with boiling water and add couscous, cook as per instructions on packet.  Once cooked serve with lime and sprinkle sliced chilli over the top.

 

Plate up with the seafood and enjoy :)
